Carrot Coconut Soup

This recipe came from Dr. Mercola's site. I have tried it several times and love it. This recipe is great to add your own toppings or spices. Enjoy

Ingredients
  

  • 1 large onion
  • 3+ 1 tbsp cups Bone Broth
  • 2 tbsp fresh ginger
  • 4 cloves garlic chopped
  • 1 tsp curry powder or turmeric
  • 2 cups carrots cut into 1/4" cubes
  • 1 cup of sweet potatoes cut into 1/2" cubes
  • 5 oz coconut milk
  • salt and pepper to taste

Instructions
 

  • Chop the onion and let it sit for at least 5 minutes to bring out Its health benefits
  • Heat 1 Tbsp broth in a medium soup pot. Saute onion in broth over medium heat for about 5 min. stirring often.
  • Add garlic and ginger and mix well with the onions saute for another minute.
  • Add curry powder or turmeric and mix well with the onion mixture.
  • Add broth, carrots, and sweet potatoes and simmer on medium-high heat until the vegetables are tender, about 15 minutes
  • add the coconut milk
  • Blend in batches making sure the blender is not more than half full. When it's hot and the blender is too full it can burn you.
  • Add salt and pepper to taste,
  • return to the soup pot and reheat.
