Artichokes

Trim your artichokes like the picture. Choose round firm Artichokes. Cut the top and with scissors trim the points off. It will now look like your picture. Steam and add oil to the top of the artichoke and some in water. Add garlic cloves to the water. Boil water and reduce the temperature to low. cook for 1½ to 2 hours. Take out garlic mash it and make a sauce with it we use Avacado mayonnaise. Serve and enjoy.

Ingredients
  

  • 1 medium to large size Artichoke
  • 1 tbsp olive oil or Almond oil
  • 8 cloves garlic peeled

Instructions
 

  • Trim the Artichoke, cut the top off, and trim the pointy ends with scissors cut off the excess stem to have a flat bottom, wash with pure water. While washing open up the leaves.
  • In a pot with a lid place, a couple of inches of water add Artichoke, and bring to a boil. Reduce heat to low with cover on.
  • Peel garlic and place in a pot with the Artichokes.
  • Cook for 1½-2 hours if the leaves come out easily it will be done. If it is tough to pull out a leaf cook longer, each artichoke is different. We like our artichokes to feel meaty and soft to eat.
  • Take the garlic cloves out of the water with a slotted spoon and place them in a small dish.
  • Mash the garlic, add your favorite mayonnaise or any sauce you like.
  • Enjoy the leaves of the artichoke dipping in your sauce.
  • To eat the leaves place the light end in your mouth, dip in your sauce and scrape with your teeth.
  • When the leaves are eaten. lift out the choke and discard the inedible hairy part and discard. What is left is the heart.
  • Enjoy the heart cut it up and dip in your sauce.
